I always taught my flight students about Center of Gravity (CG) and Center of Lift (CL) using a see-saw to visualize it. Nasa has a great overview of flight and flight control surfaces here:

The elevator act as the moving surface of the lever (see-saw) that allows the aircraft to pitch up and down to climb or descend. It also allows the aircraft to stay level in flight even as the weight shift from passengers moving about the cabin and fuel being consumed.
